The cherry
Coffee starts as the seed of a red fruit. We buy from farms that pick only the ripe ones, because one green cherry can sour a whole batch.
He grew up within earshot of Niagara, where a whole river drops off the edge in one long roar. You learn two things from water like that: patience and precision. Arquebus is built on both.
The name comes from the arquebus, the hand-built long gun of the 1500s that rewarded a steady hand and a careful aim. We roast the same way: by hand, by the numbers, one batch at a time.
